THE VINEGAR CELLAR
La Subida vinegar is made from a grape native to our land: Ribolla Gialla.
After slow acetification, the liquid rests for years in small barrels made from different woods, which lend subtle variations of aroma and colour.
The result is a luminous vinegar with a complex yet harmonious flavour: a gentle note that enhances dishes without overpowering them, carrying within it the taste of the land and the time of waiting.
A precious ingredient, but above all a small lesson in patience and balance.

PICNICS AND APERITIFS
Two different moments to experience La Subida through food and wine.
The picnic, by reservation only, is for guests staying at our property who wish, during the warmer months, to dine immersed in the green of our meadows and woods.
The aperitif can be enjoyed indoors or in our shared spaces, featuring small kitchen preparations and wines from our list.
