The grape vinegar produced locally at La Subida’s Acetaia di Sirk has a very recognisable character, just like the grapes from which it is made, the autochthonous yellow grape vineyards of the Friulian Collio Gorizia lands.
The processing starts with whole Ribolla Gialla grapes – characterised by a thick skin and a long maceration period – to obtain a product which, when it comes to complexity, equals the renowned wines produced in the area.
This wine originates from the two organically grown vineyards of Plessiva and Mernicco. The vines are about 25 to 35 years old and grow on the local rocky “ponca” soils consisting of compacted sandstone and marl.
A 100% Friulano wine, easy to drink without foregoing a strong aromatic character that leads to a well-defined and clean finish.
