Sever, in Slovenian, means north. And it’s from there — from the far northern edge, in Medeazza-Medjevas, a hamlet of Duino Aurisina-Devin-Nabrežina — that Severjevo extra virgin olive oil comes, produced by Miloš Čotar’s farm.
A demanding land, and yet it’s precisely out of that hardship, out of a deep knowledge of the place and years of careful study, that this oil is born: 100% Bianchera, a native cultivar, slightly bitter and peppery, originally from Istria and able to withstand the region’s harsh climate — the Bora wind, the low temperatures, the limestone soil. That’s exactly why we choose it: because, like so many of the raw materials we bring to the table, it tells the story of someone devoted to their land, carrying forward projects that, however demanding, enrich our own story and keep its character alive.
