sustainability

Sustainability is not just a word to us:
it is made up of many small gestures, thoughts, decisions and care.

Sustainability is not just a word to us:
it is made up of many small gestures, thoughts, decisions and care.

A way to look to the future of La Subida and to concretely support and respectfully guard the wonderful natural, human and cultural biodiversity that surrounds us.

Why do we buy local vegetables, meat, eggs, legumes, flours and cheeses?

We look at the local area as a complex and beautiful fabric, an interweaving of social, cultural, human and economic threads. Buying local products allows us to have the highest quality and to support, with our work, the work of many small artisans and agricultural producers.

Why does the menu at the restaurant and tavern change with the seasons?

Our menus change following the seasons and the availability of raw materials. We are inspired by what nature has to offer and what has traditionally been eaten at a specific time of year, learning to listen to our body’s feeding needs. And learning the value of waiting for something….

Why do we use all parts of vegetables and meats in our cooking preparations?

Nothing is thrown away in the kitchen: an anti-waste lesson learned from the generations before us. But also a choice of respect for the work of those who produce the raw materials we use and toward the environment, whose resources are not inexhaustible.

Why the choice of game?

Wild game is the most ethical, sustainable and healthy meat you can find: wild takes into account the existence of the animal, which is born in the wild and lives freely. Animals in the wild have a natural diet and are not subjected to drug treatments.
A peaceful but firm way of saying no to intensive livestock farms, the conditions in which animals are raised, and the huge impact on the environment that results.

Why do we use wood chip heating for all our activities?

We have chosen to heat ourselves by burning wood chips. Wood chips are environmentally friendly because they are made from residues from wood processing or tree cutting. It is available in large quantities and is a fuel that while efficient and high-yielding, does not pollute.

Why did we include animals in the farm?

Animals are part of a complex ecosystem, of that natural biodiversity we value preserving. They make themselves useful by keeping fields clean, brighten the atmosphere with their constant companionship, and remind us that we share this planet and all live under the same sky!

Why do we buy mostly organic products and grow the vineyards - from which our vinegar and Mitja wine come - under organic regimes and using biodynamic practices?

We care about the future of the Earth: this responsibility leads us to respect the plant starting with the soil, making it rich and fertile through organic and biodynamic farming. We inhabit these lands and guard them, with sincere respect and daily care.

Why have we eliminated single-use plastic packages in homes, replacing them with refillable packages?

Plastic (and its improper disposal) is responsible for most of the world’s pollution of water, air, soil. Let’s do our small part by replacing disposable cosmetic packaging in the homes and abodes of the Borgo with reusable packaging. More beautiful, good, clean and … local!

Why do we try to make the working life of La Subida staff pleasant and constructive?

This work, which we love, absorbs a good portion of our time, but we believe it is healthy and necessary to also have free time to spend with loved ones. That’s why our staff works shifts that allow them to devote time to their families and their passions. And at other times they train with us, participating in activities that grow and teach them how to be good together.

IL BELLO DEL SELVATICO

Il selvatico tiene conto dell’esistenza dell’animale, che nasce in natura e vive libero. Gli animali allo stato brado hanno un’alimentazione naturale e non sono sottoposti a trattamenti farmacologici.
