We’ve built an entire dish around it — The Red Tomato. We tell its story in four different ways, the way you might tell the same tale with four different voices. Raw, in its simplest and most immediate form. Vinegar-marinated, to draw out its quiet depth. Grilled, for that bold edge the fire gives it. And finally, candied — to bring forward its sweetness and let it linger. Tomato water and basil pesto complete the picture, discreet but essential.
